My friend Manolo Conde started out a lechon shop years ago and left it. It was one of the best lechons I’ve tasted. It was true to the Ilonggo lechon we all knew growing up in Negros. Simple tasting with the porky taste as the main star without any harsh flavors masking it. Batwan and tanglad and salt and pork, that’s it!!!
Recently, he texted again and informed me that he started Marca Dukke lechon shop. This is so much better than the original he also started. The crispy skin is a tough act to follow. Crispiest! And the sauce is made out of pork’s liver which is hard to find nowadays.
